The Friday before Easter Sunday is the day when the Easter doughnuts and vigil empanadas are eaten. Since no meat is eaten, there is nothing better than to substitute that filling with tuna and have the perfect excuse to savor a different taste. But it’s no easy task to make Easter doughnuts or Easter empanadas exquisite. If you are going to eat roscas or empanada de vigilia once a year, at least make them the best.
